Creole-marinated Tomatoes

Ingredients

  • Servings: 4
  • 3 lbs large tomatoes, cored, each cut into 6 wedges
  • 4 large green onions, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 cup extra virgin olive oil
  • 3/4 cup rice vinegar
  • 2 tablespoons packed dark brown sugar
  • 1 celery, thinly sliced
  • 2 large garlic cloves, thinly sliced
  • 1 tablespoon chopped fresh oregano
  • 1 1/2 teaspoons chopped fresh thyme
  • 1 teaspoon hot pepper sauce
  • 1 teaspoon finely grated lemon peel
  • 1 teaspoon salt
  • 1 teaspoon fresh ground black pepper

Recipe

  • 1 combine tomatoes, green onions, and parsley in large bowl.
  • 2 combine oil and all remaining ingredients in heavy medium saucepan.
  • 3 stir over medium-low heat until sugar and salt dissolve, about 1 minute.
  • 4 stir warm marinade into tomato mixture.
  • 5 chill at least 4 hours and up to 6 hours.
