Creole-marinated Tomatoes

Ingredients

- 3 lbs large tomatoes, cored, each cut into 6 wedges
- 4 large green onions, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 cup extra virgin olive oil
- 3/4 cup rice vinegar
- 2 tablespoons packed dark brown sugar
- 1 celery, thinly sliced
- 2 large garlic cloves, thinly sliced
- 1 tablespoon chopped fresh oregano
- 1 1/2 teaspoons chopped fresh thyme
- 1 teaspoon hot pepper sauce
- 1 teaspoon finely grated lemon peel
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
Recipe
- 1 combine tomatoes, green onions, and parsley in large bowl.
- 2 combine oil and all remaining ingredients in heavy medium saucepan.
- 3 stir over medium-low heat until sugar and salt dissolve, about 1 minute.
- 4 stir warm marinade into tomato mixture.
- 5 chill at least 4 hours and up to 6 hours.
