Ingredients

- 2 (14 ounce) cans reduced-sodium beef broth
- 1 cup onion, chopped
- 1/2 cup fresh mushrooms, chopped
- 1/4 cup celery, chopped
- 1/4 teaspoon dried thyme
- 1/8-1/4 teaspoon pepper

- 2 tablespoons flour
Recipe
- 1 combine first 6 ingredients in a medium saucepan and bring to a boil.
- 2 cook 15 minutes or until liquid is reduced to 2 cups.
- 3 strain mixture through a sieve into a bowl; discard solids.
- 4 coat a medium skillet with cooking spray and place over medium-high heat until hot.
- 5 add flour and cook 2 minutes or until browned, stirring constantly.
- 6 transfer flour to a large bowl and cool completely.
- 7 add 1/4 cup broth mixture to flour and stir well with a whisk.
- 8 add remaining broth mixture; whisk well.
- 9 pour mixture in pan and place over medium-high heat.
- 10 bring to a boil; reduce heat and simmer 3 minutes or until thick, stirring constantly.
