Ingredients

- 2 (8 ounce) packages jiffy corn muffin mix
- 2 eggs
- 1 (12 ounce) can cream-style corn
- 1/4 cup vegetable oil
- 1/2 teaspoon lemon juice
- 1/2 teaspoon ground nutmeg
- 3/4 cup shredded cheddar cheese
Recipe
- 1 preheat oven to 375°.
- 2 grease one large muffin pan well, or use paper liners.
- 3 mix all ingredients together, blending well.
- 4 pour batter into prepared muffin pan, filling about 1/2 full.
- 5 bake for 22-28 minutes.
- 6 let cool before removing from pan.
