Brown Jambalaya

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 chicken breast, diced
  • 1/2 lb andouille sausage, sliced
  • 1 small green pepper, diced
  • 1 small red pepper, diced
  • 1 stalk celery, diced
  • 1 medium onion, diced
  • 2 tablespoons chopped garlic
  • 16 ounces chicken stock
  • 1 1/4 cups rice
  • 1 teaspoon cayenne pepper
  • 1 teaspoon parsley
  • 1/2 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt

Recipe

  • 1 in a cast-iron skillet, brown sausage thoroughly and reserve.
  • 2 brown chicken, allowing it to stick if possible, and reserve.
  • 3 add onions and garlic and cook for 2-3 minutes.
