Cauliflower Salad

Ingredients
- Servings: 6
- 1/2 small cauliflower
- 100 g raw cashews
- 100 g sultanas
- 50 g shredded coconut
- 200 g plain low-fat yogurt
- 1 lemon, rind of, grated
- 1/2 lemon, juice of
- salt and pepper
Recipe
- 1 cut the cauliflower into small florets (about the same size as the cashews is good) and chop the stalks a little finer.
- 2 place all ingredients in a large bowl and toss.
- 3 stand at least one hour before serving (overnight is better).
