Cauliflower Salad

Ingredients

  • Servings: 6
  • 1/2 small cauliflower
  • 100 g raw cashews
  • 100 g sultanas
  • 50 g shredded coconut
  • 200 g plain low-fat yogurt
  • 1 lemon, rind of, grated
  • 1/2 lemon, juice of
  • salt and pepper

Recipe

  • 1 cut the cauliflower into small florets (about the same size as the cashews is good) and chop the stalks a little finer.
  • 2 place all ingredients in a large bowl and toss.
  • 3 stand at least one hour before serving (overnight is better).
