Celeriac And Walnut Gratin

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 1 large celeriac
  • 1 1/2 tablespoons walnut oil
  • 300 ml vegetable stock
  • 1/2 cup chopped walnuts
  • 100 g blue cheese

Recipe

  • 1 heat oven to 190°c.
  • 2 peel, quarter and thinly slice celeriac - can be done with slicing blade of food processor.
  • 3 toss celeriac with walnut oil, season to taste.
  • 4 place in a gratin dish, spread out evenly.
  • 5 pour over stock, bake for 45 minutes.
  • 6 scatter with walnuts and crumble over blue cheese.
  • 7 cook another 15 minutes till crisp and golden.
