Chocolate-zucchini Snack Cake

Ingredients

  • Servings: 18
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups shredded unpeeled zucchini
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa
  • 1 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 1/4 cup fat-free buttermilk
  • 2 teaspoons vanilla
  • 3 egg whites or 1/2 cup egg substitute
  • 1 tablespoon powdered sugar

Recipe

  • 1 combine first 12 ingredients in a large bowl; stir well.
  • 2 pour batter into a 13 x 9 x 2-inch baking pan coated with cooking spray.
  • 3 bake at 350 degrees for 45 minutes or until a wooden pick inserted in the center comes out clean.
  • 4 cool completely in pan on a wire rack. dust with powdered sugar.
