Chocolate-zucchini Snack Cake

Ingredients

- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups shredded unpeeled zucchini
- 1 cup sugar
- 1/4 cup unsweetened cocoa
- 1 teaspoon cinnamon
- 1/2 cup vegetable oil
- 1/4 cup fat-free buttermilk
- 2 teaspoons vanilla
- 3 egg whites or 1/2 cup egg substitute
- 1 tablespoon powdered sugar
Recipe
- 1 combine first 12 ingredients in a large bowl; stir well.
- 2 pour batter into a 13 x 9 x 2-inch baking pan coated with cooking spray.
- 3 bake at 350 degrees for 45 minutes or until a wooden pick inserted in the center comes out clean.
- 4 cool completely in pan on a wire rack. dust with powdered sugar.
