Dibi (senegalese Grilled Lamb With Onion-mustard Sauce)

Ingredients

- 8 lamb loin chops
- 1 tablespoon vegetable oil
- 1/4 cup vegetable oil
- salt
- pepper
- 1 medium onion, finely chopped
- 1/4 cup grainy french mustard
- 3 -4 tablespoons water
- 1/2 teaspoon sugar (optional)
Recipe
- 1 preheat grill to high.
- 2 brush 1 tablespoon oil lightly over lamb on both sides.
- 3 season with salt and pepper. set aside.
- 4 combine 1/4 cup oil, onion and mustard in a small, heavy saucepan.
- 5 bring to a boil, stirring.
- 6 reduce heat to low and simmer gently until the onion is soft, about 10 minutes, stirring frequently.
- 7 use water to thin mixture to sauce consistency.
- 8 add sugar if sauce is too tart.
- 9 remove from heat and cover to keep warm.
- 10 oil grill grate.
- 11 grill chops to desired degree of doneness, turning with tongs, 6-8 minutes per side for medium.
- 12 transfer chops to plate and spoon sauce on top.
