Dibi (senegalese Grilled Lamb With Onion-mustard Sauce)

Ingredients

  • Servings: 4
  • 8 lamb loin chops
  • 1 tablespoon vegetable oil
  • 1/4 cup vegetable oil
  • salt
  • pepper
  • 1 medium onion, finely chopped
  • 1/4 cup grainy french mustard
  • 3 -4 tablespoons water
  • 1/2 teaspoon sugar (optional)

Recipe

  • 1 preheat grill to high.
  • 2 brush 1 tablespoon oil lightly over lamb on both sides.
  • 3 season with salt and pepper. set aside.
  • 4 combine 1/4 cup oil, onion and mustard in a small, heavy saucepan.
  • 5 bring to a boil, stirring.
  • 6 reduce heat to low and simmer gently until the onion is soft, about 10 minutes, stirring frequently.
  • 7 use water to thin mixture to sauce consistency.
  • 8 add sugar if sauce is too tart.
  • 9 remove from heat and cover to keep warm.
  • 10 oil grill grate.
  • 11 grill chops to desired degree of doneness, turning with tongs, 6-8 minutes per side for medium.
  • 12 transfer chops to plate and spoon sauce on top.
