Bell Pepper Relish

Total Time: 2 hrs 30 mins Preparation Time: 2 hrs Cook Time: 30 mins

Ingredients

  • 12 large red bell peppers
  • 12 large green bell peppers
  • 12 large onions
  • 3 cups sugar
  • 3 cups vinegar
  • 2 tablespoons celery seeds
  • 2 tablespoons salt

Recipe

  • 1 grind or otherwise process peppers and onions into finely chopped, even mushy, consistency.
  • 2 cover with boiling water and let stand 10 minutes.
  • 3 drain well.
  • 4 save juice to add to vinegar mixture if needed to cover vegetables.
  • 5 add sugar, vinegar, celery seed and salt.
  • 6 boil 15 minutes.
  • 7 pour into sterilized canning jars and seal.
