Curried Rice And Bean Salad

Ingredients

  • Servings: 6
  • 3 cups cooked brown rice
  • 1 1/2 cups cooked red kidney beans
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 2 celery ribs, diced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup plain nonfat yogurt
  • 2 teaspoons curry powder
  • black pepper (to taste)
  • salt (to taste)

Recipe

  • 1 mix yogurt, and curry powder together in a small bowl; season to taste with salt and black pepper.
  • 2 combine remaining ingredients in a salad bowl.
  • 3 pour dressing over salad and toss to mix.
  • 4 marinate salad, refrigerated, for 2 hours, before serving.
